Ingredients
  

  • 2 cups roasted red peppers drained
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 0.5 cup heavy cream
  • 0.25 cup Parmesan cheese grated
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes optional

Method
 

  1. Heat olive oil and sauté garlic until fragrant.
  2. Add roasted red peppers and warm briefly.
  3. Blend mixture until smooth.
  4. Return to saucepan and stir in cream and Parmesan.
  5. Season and simmer briefly until slightly thickened.

Notes

Add reserved pasta water to adjust consistency if needed.
