Ingredients
  

Base Ingredients
  • 2 small tortillas corn or flour
  • 2 large eggs scrambled
  • 0.25 cup shredded cheddar cheese
  • 0.25 cup diced avocado
  • 0.25 cup cooked sausage slices optional
  • 1 tsp cooking oil or butter
  • to taste salt & pepper
  • to taste salsa or hot sauce
  • for garnish fresh cilantro

Equipment

  • Nonstick pan
  • Mixing bowl
  • Spatula
  • Microwave or skillet

Method
 

  1. Heat a small nonstick pan over medium heat and add oil or butter. Whisk eggs with salt and pepper, then scramble in the pan for 1–2 minutes.
  2. Warm tortillas in the microwave for 15–20 seconds or on a dry skillet for 30 seconds per side.
  3. Assemble tacos by placing scrambled eggs on tortillas, topping with cheese and optional sausage.
  4. Add diced avocado, salsa or hot sauce, and garnish with fresh cilantro.
  5. Fold tortillas and serve immediately while warm.
