Ingredients
  

Soup Base
  • 1 tbsp olive oil
  • 1 yellow onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tsp turmeric
  • 0.5 tsp black pepper
  • 0.5 tsp sea salt
Main Ingredients
  • 4 cups chicken broth
  • 2 cups cooked shredded chicken
  • 3 cups cauliflower florets
  • 1 tbsp lemon juice

Equipment

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion, carrots, and celery until softened.
  3. Add garlic and ginger; cook until fragrant.
  4. Stir in turmeric, black pepper, and salt.
  5. Add broth and cauliflower; simmer until tender.
  6. Partially blend soup for creaminess.
  7. Stir in shredded chicken and heat through.
  8. Finish with lemon juice and serve warm.

Notes

Use rotisserie chicken for convenience. Add coconut milk for a creamier version.
