Ingredients
  

  • 12 oz penne pasta
  • 1 tbsp olive oil
  • 12 oz Italian sausage mild or spicy
  • 1 red onion sliced
  • 1 bell pepper sliced
  • 1 zucchini sliced
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved

Equipment

  • Large pot
  • Large skillet

Method
 

  1. Cook pasta in salted water until al dente.
  2. Brown sausage in olive oil and set aside.
  3. Sauté vegetables until tender-crisp.
  4. Add tomatoes and seasonings; cook briefly.
  5. Return sausage, add pasta and pasta water, toss to combine.
  6. Garnish with basil and parmesan before serving.

Notes

Reserve pasta water to adjust sauce consistency.
