- In a small bowl, combine warm milk, sugar, and yeast. Let sit 5–10 minutes until foamy.
- In a large mixing bowl, whisk together eggs, vanilla, and salt. Add yeast mixture and stir.
- Gradually incorporate flour until sticky dough forms, then mix in softened butter.
- Knead dough 6–8 minutes until smooth and elastic. Place in oiled bowl, cover, and rise 1–2 hours until doubled.
- Roll dough to 1/2-inch thickness and cut into 2-inch squares.
- Heat oil to 350°F. Fry dough squares 2–3 minutes per side until golden. Drain on paper towels.
- Dust warm beignets generously with powdered sugar and serve immediately.
Notes
For extra flavor, add a pinch of cinnamon or nutmeg to the dough.
