Ingredients
  

Dough
  • 2 1/4 tsp active dry yeast 1 packet
  • 3/4 cup warm whole milk 110°F/45°C
  • 1/4 cup granulated sugar
  • 2 eggs large
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 3 1/2 cups all-purpose flour
  • 1/4 cup unsalted butter softened
  • vegetable oil for frying
Dusting
  • 1 cup powdered sugar

Method
 

  1. In a small bowl, combine warm milk, sugar, and yeast. Let sit 5–10 minutes until foamy.
  2. In a large mixing bowl, whisk together eggs, vanilla, and salt. Add yeast mixture and stir.
  3. Gradually incorporate flour until sticky dough forms, then mix in softened butter.
  4. Knead dough 6–8 minutes until smooth and elastic. Place in oiled bowl, cover, and rise 1–2 hours until doubled.
  5. Roll dough to 1/2-inch thickness and cut into 2-inch squares.
  6. Heat oil to 350°F. Fry dough squares 2–3 minutes per side until golden. Drain on paper towels.
  7. Dust warm beignets generously with powdered sugar and serve immediately.

Notes

For extra flavor, add a pinch of cinnamon or nutmeg to the dough.
