Ingredients
  

  • 1 lb ground sausage mild or sage-flavored
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 3 sweet potatoes peeled and sliced
  • 2 apples thinly sliced
  • 1 cup shredded cheddar cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.75 cup heavy cream
  • 1 tsp dried thyme
  • 0.5 tsp ground sage
  • 0.25 tsp ground nutmeg
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp olive oil or butter
  • 0.5 cup breadcrumbs optional topping
  • fresh parsley for garnish

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9x13-inch dish.
  2. Brown sausage with onions and garlic; drain excess grease.
  3. Layer sweet potatoes, apples, sausage, and cheese in dish.
  4. Whisk cream with thyme, sage, nutmeg, salt, and pepper; pour over layers.
  5. Top with breadcrumbs if desired; cover and bake 35 minutes, then uncover and bake 15 more until golden.
  6. Cool 10 minutes, garnish with parsley, and serve warm.

Notes

To make ahead, assemble casserole and refrigerate up to 24 hours before baking.
