- Boil sweet potatoes until tender, drain, and mash with butter, milk, brown sugar, salt, and pepper.
- Season pork medallions with salt and pepper.
- Sear pork in olive oil 2–3 minutes per side; remove from skillet.
- Add butter and garlic to skillet; sauté 30 seconds.
- Add apple cider, Dijon mustard, brown sugar, and thyme; simmer 5–7 minutes.
- Return pork to skillet and simmer until sauce thickens and pork is cooked.
- Serve pork over mashed sweet potatoes with extra sauce.
Notes
Use real apple cider for best flavor. Add a splash of cream to the sauce for richness.
