Ingredients
  

Crepe Batter
  • 1 cup all-purpose flour
  • 2 eggs large
  • 1.25 cups milk
  • 1 tbsp sugar
  • 1 tsp vanilla extract
  • 2 tbsp butter melted
  • 0.25 tsp salt
Apple Cinnamon Filling
  • 3 apples peeled and sliced
  • 2 tbsp butter
  • 0.25 cup brown sugar
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tsp lemon juice
  • 2 tbsp water

Method
 

  1. Whisk flour, eggs, milk, sugar, vanilla, melted butter, and salt until smooth.
  2. Let batter rest for 15 minutes.
  3. Cook apples in butter over medium heat until slightly softened.
  4. Add brown sugar, cinnamon, nutmeg, lemon juice, and water; cook until apples are tender.
  5. Heat a non-stick skillet and pour 1/4 cup batter, swirling to form a thin crepe.
  6. Cook about 1 minute, flip, and cook another 30 seconds.
  7. Repeat with remaining batter.
  8. Fill crepes with apple mixture and fold.
  9. Top with powdered sugar or maple syrup and serve.

Notes

Use thin batter and a non-stick pan for the best crepes.
