- Whisk flour, eggs, milk, sugar, vanilla, melted butter, and salt until smooth.
- Let batter rest for 15 minutes.
- Cook apples in butter over medium heat until slightly softened.
- Add brown sugar, cinnamon, nutmeg, lemon juice, and water; cook until apples are tender.
- Heat a non-stick skillet and pour 1/4 cup batter, swirling to form a thin crepe.
- Cook about 1 minute, flip, and cook another 30 seconds.
- Repeat with remaining batter.
- Fill crepes with apple mixture and fold.
- Top with powdered sugar or maple syrup and serve.
Notes
Use thin batter and a non-stick pan for the best crepes.
