Ingredients
  

Graham Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cup brown sugar
  • 6 tbsp butter melted
  • 0.5 tsp cinnamon
Cheesecake Layer
  • 16 oz cream cheese softened
  • 0.5 cup sugar
  • 1 tsp vanilla extract
  • 1 egg large
  • 2 tbsp sour cream
Apple Filling
  • 2 apples peeled and diced
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 1 tbsp white sugar
  • 0.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tbsp water or apple juice
Crisp Topping
  • 0.5 cup rolled oats
  • 0.25 cup all-purpose flour
  • 0.25 cup brown sugar
  • 0.25 tsp cinnamon
  • 3 tbsp butter cold and cubed

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment.
  2. Mix graham crumbs, brown sugar, cinnamon, and melted butter. Press into pan and bake 8 minutes.
  3. Beat cream cheese and sugar until smooth. Add egg, vanilla, and sour cream; mix until blended.
  4. Cook diced apples with butter, sugars, cinnamon, nutmeg, and water until softened.
  5. Combine oats, flour, brown sugar, cinnamon, and cold butter to form crumble.
  6. Spread cheesecake batter over crust. Add apple filling, then sprinkle crisp topping.
  7. Bake 28–32 minutes until edges are set. Cool fully and chill 3 hours before cutting.

Notes

Add caramel drizzle for extra sweetness.
