- Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment.
- Mix graham crumbs, brown sugar, cinnamon, and melted butter. Press into pan and bake 8 minutes.
- Beat cream cheese and sugar until smooth. Add egg, vanilla, and sour cream; mix until blended.
- Cook diced apples with butter, sugars, cinnamon, nutmeg, and water until softened.
- Combine oats, flour, brown sugar, cinnamon, and cold butter to form crumble.
- Spread cheesecake batter over crust. Add apple filling, then sprinkle crisp topping.
- Bake 28–32 minutes until edges are set. Cool fully and chill 3 hours before cutting.

Add caramel drizzle for extra sweetness.
