Ingredients
  

Salad
  • 2 cups cucumbers finely diced
  • 2 cups tomatoes finely diced
  • 0.5 cup fresh parsley finely chopped
  • 0.25 cup red onion finely diced
  • 3 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper
  • 0.5 tsp sumac optional

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Finely dice cucumbers and tomatoes.
  2. Chop parsley and red onion finely.
  3. Combine vegetables in large bowl.
  4. Whisk lemon juice, olive oil, salt, pepper, and sumac.
  5. Pour dressing over vegetables.
  6. Toss gently and let rest 10 minutes before serving.

Notes

Best served fresh. Adjust lemon and salt to taste.
