Ingredients
  

Bruschetta Topping
  • 3-4 Roma or vine tomatoes finely diced
  • 3 cloves garlic minced
  • 1/4 cup fresh basil leaves chopped
  • 1/4 cup extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes optional
Garlic Parmesan Toasts
  • 1 loaf baguette or ciabatta sliced 1/2 inch thick
  • 1/4 cup grated Parmesan cheese
  • as needed olive oil for brushing

Method
 

  1. Combine diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper in a medium bowl. Toss gently and let sit for 10 minutes.
  2. Preheat oven to 400°F (200°C). Arrange bread slices on a baking sheet, brush lightly with olive oil, and sprinkle with Parmesan.
  3. Bake for 5-7 minutes until golden and crispy.
  4. Spoon tomato mixture over toasted bread slices.
  5. Serve immediately with optional red pepper flakes or drizzle of balsamic glaze.

Notes

Use fresh, ripe tomatoes and fresh basil for the best flavor. Assemble just before serving to keep toasts crisp.
