- Combine diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper in a medium bowl. Toss gently and let sit for 10 minutes.
- Preheat oven to 400°F (200°C). Arrange bread slices on a baking sheet, brush lightly with olive oil, and sprinkle with Parmesan.
- Bake for 5-7 minutes until golden and crispy.
- Spoon tomato mixture over toasted bread slices.
- Serve immediately with optional red pepper flakes or drizzle of balsamic glaze.
