Ingredients
  

Avocado Shrimp Ceviche
  • 1 lb cooked shrimp peeled and chopped
  • 2 ripe avocados diced
  • 1 cup cherry tomatoes quartered
  • 0.25 cup red onion finely chopped
  • 1 jalapeño minced, optional
  • 0.25 cup fresh cilantro chopped
  • 2 limes juiced
  • 1 tbsp olive oil
  • salt and black pepper to taste

Method
 

  1. Chop shrimp, dice avocados, quarter cherry tomatoes, and finely chop red onion and cilantro. Mince jalapeño if using.
  2. In a large bowl, combine lime juice, olive oil, salt, and pepper.
  3. Gently fold shrimp, avocado, tomatoes, red onion, jalapeño, and cilantro into lime dressing until coated.
  4. Cover and refrigerate 10–15 minutes. Serve chilled.

Notes

Use fresh ingredients for best flavor. Handle avocado gently to maintain shape.
