Bacon Cheeseburger Casserole

Ingredients
  

  • 8 oz elbow macaroni cooked and drained
  • 1 lb ground beef
  • 0.5 yellow onion finely diced
  • 3 cloves garlic minced
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika
  • 0.5 cup ketchup
  • 2 tbsp yellow mustard
  • 2 tbsp cream cheese softened
  • 0.5 cup milk
  • 1 cup shredded cheddar cheese divided
  • 1 cup shredded mozzarella cheese divided
  • 6 slices bacon cooked and crumbled
  • chopped parsley or green onions for garnish

Equipment

  • Large skillet
  • 9x13-inch baking dish
  • Mixing spoon
  • Colander

Method
 

  1. Cook pasta until al dente, drain, and set aside.
  2. Cook bacon until crispy, crumble, and reserve a tablespoon of grease in skillet.
  3. Add ground beef and onion to skillet, cook until browned, drain excess fat.
  4. Add garlic, salt, pepper, and paprika. Stir in ketchup, mustard, cream cheese, and milk.
  5. Add pasta and half the cheese to the beef mixture and stir well.
  6. Transfer to greased baking dish, top with remaining cheese and bacon.
  7. Bake at 375°F (190°C) for 20 minutes or until bubbly.
  8. Garnish with parsley or green onions and serve warm.

Notes

For a BBQ twist, replace ketchup with barbecue sauce. Freeze leftovers in airtight containers for up to 3 months.
