Ingredients
  

Casserole Ingredients
  • 1 lb ground beef
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 can diced green chiles optional
  • 1 can whole green chiles 10 oz, roasted
  • 2 cups shredded cheese Mexican blend or Monterey Jack
Egg Mixture
  • 4 eggs large
  • 1 cup milk
  • 1 tbsp flour
  • 0.5 cup tomato sauce

Method
 

  1. Cook ground beef with diced onion until browned.
  2. Add garlic, cumin, chili powder, smoked paprika, salt, and pepper. Stir in diced green chiles if using.
  3. Layer whole roasted green chiles in a greased 9x13 baking dish.
  4. Spread beef mixture over the chiles and top with 1 cup shredded cheese.
  5. Add another layer of green chiles and sprinkle with remaining cheese.
  6. Whisk eggs, milk, flour, and tomato sauce until smooth.
  7. Pour egg mixture evenly over the casserole.
  8. Bake at 375°F (190°C) for 35–40 minutes until set and golden.
  9. Cool 10 minutes before serving. Garnish with cilantro.

Notes

Letting the casserole rest helps it slice perfectly. Use Hatch chiles for extra heat.
