Ingredients
  

Main Ingredients
  • 1 block feta cheese 8 oz
  • 2 cups cherry tomatoes
  • 2 cups spinach chopped
  • 1.5 cups orzo uncooked
  • 3 tbsp olive oil
  • 3 garlic cloves minced
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp oregano
  • 0.5 tsp crushed red pepper flakes optional
Finishing Ingredients
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 2-3 tbsp pasta water reserved

Method
 

  1. Preheat oven to 400°F (200°C). Place feta block in the center of a baking dish and surround with cherry tomatoes.
  2. Drizzle with olive oil and add garlic, salt, pepper, oregano, and red pepper flakes.
  3. Bake for 30 minutes, until feta is soft and tomatoes have burst.
  4. Meanwhile, cook orzo in salted boiling water until al dente; reserve pasta water.
  5. Add spinach to the hot baking dish and stir to wilt.
  6. Mash baked feta and tomatoes into a creamy sauce base.
  7. Stir in cooked orzo, lemon juice, lemon zest, and pasta water until creamy.
  8. Taste and adjust seasoning before serving warm.

Notes

Add olives or roasted red peppers for extra Mediterranean flavor.
