Ingredients
  

Potato Base
  • 2 lbs baby potatoes halved
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes optional
Feta Topping
  • 1 block feta cheese 7–8 oz
  • 1 lemon zested
  • salt to taste
  • fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 400°F (205°C) and grease a baking dish.
  2. Toss potatoes with olive oil, garlic, herbs, pepper, and red pepper flakes.
  3. Spread potatoes in dish and place feta block in center.
  4. Drizzle feta with olive oil and sprinkle lemon zest over dish.
  5. Bake uncovered for 40–45 minutes until potatoes are golden.
  6. Stir feta into potatoes, garnish with parsley, and serve.

Notes

Use block feta for best creamy texture.
