- Preheat oven to 400°F (205°C) and grease a baking dish.
- Toss potatoes with olive oil, garlic, herbs, pepper, and red pepper flakes.
- Spread potatoes in dish and place feta block in center.
- Drizzle feta with olive oil and sprinkle lemon zest over dish.
- Bake uncovered for 40–45 minutes until potatoes are golden.
- Stir feta into potatoes, garnish with parsley, and serve.
Notes
Use block feta for best creamy texture.
