- Preheat oven to 400°F (200°C) and prepare a baking sheet.
- Toss potatoes with olive oil, herbs, paprika, salt, and pepper.
- Spread potatoes, onions, bell pepper, and garlic on the sheet.
- Roast 25–30 minutes, tossing halfway through.
- Add feta and bake 10–12 minutes more until softened.
- Drizzle with lemon juice and honey, garnish, and serve warm.
Notes
Use fresh herbs for best flavor. Can substitute sweet potatoes for a twist.
