Ingredients
  

Potatoes & Vegetables
  • 2 lbs baby potatoes halved or quartered
  • 1 red onion thinly sliced
  • 2 cloves garlic minced
  • 1 bell pepper sliced
Feta & Dairy
  • 7 oz feta cheese cubed or crumbled
  • 1–2 tbsp Greek yogurt optional
Herbs & Seasonings
  • 2 tsp fresh rosemary chopped
  • 2 tsp fresh thyme leaves
  • 1 tsp oregano
  • 0.5 tsp smoked paprika
  • to taste salt and black pepper
Oils & Extras
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey optional

Equipment

Method
 

  1. Preheat oven to 400°F (200°C) and prepare a baking sheet.
  2. Toss potatoes with olive oil, herbs, paprika, salt, and pepper.
  3. Spread potatoes, onions, bell pepper, and garlic on the sheet.
  4. Roast 25–30 minutes, tossing halfway through.
  5. Add feta and bake 10–12 minutes more until softened.
  6. Drizzle with lemon juice and honey, garnish, and serve warm.

Notes

Use fresh herbs for best flavor. Can substitute sweet potatoes for a twist.
