Method
- Preheat oven to 400°F (200°C).
- Wash, halve, and dry the baby potatoes thoroughly.
- Toss potatoes with olive oil, garlic, oregano, thyme, paprika, salt, and pepper.
- Spread potatoes on a baking dish and place the feta block in the center.
- Drizzle olive oil over feta and season lightly.
- Bake for 35–40 minutes, stirring potatoes halfway through.
- Remove from oven and mix softened feta with the roasted potatoes.
- Drizzle lemon juice, garnish with parsley, and serve warm.
Notes
For extra crispiness, avoid overcrowding the pan and always roast at high heat.
