Ingredients

  • 2 lbs baby potatoes halved
  • 200 g feta cheese block
  • 4 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 0.5 tsp paprika
  • 0.5 tsp black pepper
  • 0.5 tsp salt adjust to taste
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley chopped
  • 0.25 tsp chili flakes optional

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Wash, halve, and dry the baby potatoes thoroughly.
  3. Toss potatoes with olive oil, garlic, oregano, thyme, paprika, salt, and pepper.
  4. Spread potatoes on a baking dish and place the feta block in the center.
  5. Drizzle olive oil over feta and season lightly.
  6. Bake for 35–40 minutes, stirring potatoes halfway through.
  7. Remove from oven and mix softened feta with the roasted potatoes.
  8. Drizzle lemon juice, garnish with parsley, and serve warm.

Notes

For extra crispiness, avoid overcrowding the pan and always roast at high heat.
