Baked Jamaican Pineapple Jerk Chicken: Sweet, Spicy, and Irresistible

Ingredients
  

Chicken
  • 2 lbs chicken thighs bone-in or boneless
  • 1 tbsp olive oil
  • 1.5 tbsp jerk seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Pineapple Jerk Sauce
  • 1 cup pineapple juice
  • 0.5 cup crushed pineapple
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp lime juice
  • 1 tsp jerk seasoning extra
Garnish
  • cilantro or green onions chopped
  • grilled pineapple optional

Method
 

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. Season chicken thighs with olive oil, jerk seasoning, salt, and pepper.
  3. In a bowl, whisk pineapple juice, crushed pineapple, soy sauce, brown sugar, garlic, ginger, lime juice, and extra jerk seasoning.
  4. Place chicken in the baking dish and pour half the pineapple jerk sauce over it.
  5. Bake for 20 minutes, then pour the remaining sauce over the chicken.
  6. Continue baking 15–20 minutes until caramelized, sticky, and cooked through.
  7. Optional: Broil for 2–3 minutes for extra caramelization.
  8. Garnish with cilantro and grilled pineapple. Serve warm.

Notes

Adjust jerk seasoning based on heat preference. Double the sauce if serving with rice.
