Method
- Preheat oven to 350°F and line baking sheets with parchment.
- Whisk flour, baking soda, ginger, cinnamon, and cloves together.
- Beat butter and sugars until light and fluffy.
- Mix in egg, molasses, and vanilla.
- Gradually mix in dry ingredients.
- Chill dough for 20–30 minutes.
- Roll dough balls in sugar and place on baking sheets.
- Bake 9–11 minutes until edges are set and centers are soft.
- Cool briefly before transferring to a rack.
Notes
Do not overbake; cookies will continue to set as they cool.
