Ingredients
  

  • 2.25 cups all-purpose flour
  • 2 tsp baking soda
  • 0.5 tsp salt
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 0.5 tsp ground cloves
  • 0.75 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1 egg large
  • 0.25 cup molasses
  • 0.25 cup granulated sugar for rolling

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, salt, ginger, cinnamon, and cloves in a medium bowl.
  3. Cream butter and brown sugar until light and fluffy.
  4. Add egg and molasses, beating until combined.
  5. Gradually mix in dry ingredients to form a soft dough.
  6. Roll dough into 1-inch balls, then roll in granulated sugar.
  7. Place 2 inches apart on prepared baking sheets.
  8. Bake 10–12 minutes until cookies are set but soft in the center. Cool 5 minutes on sheets, then transfer to wire racks.

Notes

Cookies stay soft when stored in an airtight container. Dough can be frozen for later baking.
