Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.25 tsp salt
Wet Ingredients
  • 3 ripe bananas mashed
  • 0.33 cup unsalted butter melted
  • 0.5 cup brown sugar
  • 1 egg large
  • 1 tsp vanilla extract
Mix-Ins
  • 0.5 cup mini chocolate chips plus extra for topping

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 24-cup mini muffin tin.
  2. Whisk flour, baking soda, baking powder, and salt in a small bowl.
  3. Mash bananas in a large bowl and whisk in melted butter, brown sugar, egg, and vanilla.
  4. Add dry ingredients and mix gently until just combined.
  5. Fold in chocolate chips.
  6. Spoon batter into muffin cups and top with extra chocolate chips.
  7. Bake 11–14 minutes until golden and a toothpick comes out clean.
  8. Cool 5 minutes in the pan, then transfer to a wire rack.

Notes

For extra banana flavor, use very ripe bananas with plenty of brown spots.
