Ingredients
  

Salmon Bites
  • 1 lb salmon fillet cut into 1-inch cubes
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
Bang Bang Sauce
  • 3 tbsp mayonnaise
  • 1 tbsp sriracha
  • 1 tbsp honey
  • 1 tsp lime juice
Bowl Assembly
  • 2 cups cooked rice white, brown, or jasmine
  • 1 avocado sliced
  • 1 cup shredded carrots
  • 0.5 cucumber thinly sliced
  • 2 green onions chopped
  • 1 tsp sesame seeds for garnish
  • Optional lime wedges for serving

Method
 

  1. Preheat oven to 400°F (200°C) or heat skillet over medium-high heat.
  2. Toss salmon cubes with olive oil, salt, pepper, garlic powder, and paprika.
  3. Bake salmon for 10–12 minutes until cooked through and lightly crispy. Alternatively, sear in skillet 3–4 minutes per side.
  4. Whisk mayonnaise, sriracha, honey, and lime juice to make bang bang sauce.
  5. Toss cooked salmon cubes with 2–3 tbsp of sauce.
  6. Assemble bowls with rice, salmon, avocado, carrots, cucumber, and green onions.
  7. Drizzle remaining sauce over bowls and garnish with sesame seeds. Serve immediately.

Notes

Do not overcook salmon for tender, juicy bites.
