Ingredients
  

Cauliflower Fritters
  • 1 medium head cauliflower cut into florets
  • 2 eggs large
  • 0.5 cup all-purpose flour or almond flour
  • 0.5 cup shredded cheddar cheese
  • 2 cloves garlic minced
  • 2 tbsp parsley chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp olive oil for frying

Method
 

  1. Boil or steam cauliflower florets until tender, then drain and pat dry.
  2. Mash cauliflower in a bowl until finely crumbled but not pureed.
  3. Combine mashed cauliflower with eggs, flour, cheese, garlic, parsley, salt, and pepper.
  4. Form mixture into small patties using about 2 tablespoons of batter each.
  5. Heat olive oil in a skillet over medium heat and cook fritters 3–4 minutes per side until golden.
  6. Drain on paper towels and serve hot with your favorite dip.

Notes

For crispier fritters, ensure cauliflower is fully dry before mixing.
