- Boil or steam cauliflower florets until tender, then drain and pat dry.
- Mash cauliflower in a bowl until finely crumbled but not pureed.
- Combine mashed cauliflower with eggs, flour, cheese, garlic, parsley, salt, and pepper.
- Form mixture into small patties using about 2 tablespoons of batter each.
- Heat olive oil in a skillet over medium heat and cook fritters 3–4 minutes per side until golden.
- Drain on paper towels and serve hot with your favorite dip.
Notes
For crispier fritters, ensure cauliflower is fully dry before mixing.
