Method
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Cut potatoes into wedges and soak in cold water for 20–30 minutes to remove starch.
- Drain and pat dry thoroughly with paper towels.
- Toss wedges in olive oil, salt, pepper, garlic powder, paprika, and onion powder.
- Arrange in a single layer on the baking sheet and bake for 20 minutes.
- Flip wedges and bake another 15–20 minutes until golden and crispy.
- Garnish with parsley and serve hot with dipping sauce.
Notes
For extra crispiness, preheat the baking sheet in the oven before adding wedges.
