  • 1 can black beans drained and rinsed
  • 1 cup corn
  • 1 cup cherry tomatoes halved
  • 0.5 cup red onion diced
  • 1 red bell pepper diced
  • 1 avocado diced
  • 0.5 cup cilantro chopped
BBQ Ranch Dressing
  • 0.5 cup ranch dressing
  • 2 tbsp BBQ sauce
  • 0.5 tsp smoked paprika
  • 0.5 tsp chili powder
  • 1 lime juiced
  • to taste salt and pepper

Method
 

  1. Whisk together ranch dressing, BBQ sauce, smoked paprika, chili powder, salt, and pepper.
  2. In a large bowl, combine black beans, corn, tomatoes, red onion, and bell pepper.
  3. Pour BBQ ranch dressing over the salad and toss to coat.
  4. Add lime juice and cilantro and mix again.
  5. Gently fold in diced avocado.
  6. Serve chilled or immediately.

Notes

Add avocado right before serving to keep it fresh.
