Bread Base
  • 6 cups brioche bread cubes
Custard
  • 6 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 0.75 cup granulated sugar
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 0.25 tsp salt
Fruit
  • 1.5 cups fresh blueberries
Topping (optional)
  • 2 tbsp unsalted butter small pieces
  • 0.25 cup brown sugar
  • powdered sugar for serving
  • maple syrup for serving

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. Place cubed brioche in dish and scatter blueberries evenly.
  3. Whisk eggs, milk, cream, sugar, vanilla, cinnamon, and salt until smooth.
  4. Pour custard over bread cubes, pressing gently to soak all pieces. Let sit 10–15 minutes or refrigerate overnight.
  5. Sprinkle brown sugar and dot with butter pieces if desired.
  6. Cover with foil and bake 35 minutes. Remove foil and bake 20–25 minutes until golden and custard is set.
  7. Cool 5–10 minutes. Dust with powdered sugar and serve with maple syrup.

Notes

For a make-ahead option, assemble the casserole the night before and bake in the morning.
