Ingredients
  

Main Ingredients
  • 1 whole chicken 3–4 lbs, or bone-in thighs/legs
  • 10 cups water or broth
  • 3 carrots sliced
  • 3 celery stalks sliced
  • 1 onion diced
  • 4 cloves garlic minced
  • 2 bay leaves
  • 1 tsp thyme dried or 1 tbsp fresh
  • 1.5 tsp salt plus more to taste
  • 0.5 tsp black pepper
  • 2 cups egg noodles optional
  • fresh parsley for garnish
  • lemon juice optional for brightness

Equipment

Method
 

  1. Place the chicken in a large pot and add water or broth.
  2. Add onion, garlic, carrots, celery, bay leaves, thyme, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer gently for 1 hour.
  4. Remove chicken, shred meat, discard skin and bones.
  5. Skim excess fat from broth. Add noodles or rice if using and cook until tender.
  6. Return shredded chicken to the pot and stir.
  7. Taste and adjust seasoning. Stir in parsley and optional lemon.
  8. Serve warm and enjoy.

Notes

For the clearest broth, simmer gently—never boil vigorously.
