Method
- Place the chicken in a large pot and add water or broth.
- Add onion, garlic, carrots, celery, bay leaves, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer gently for 1 hour.
- Remove chicken, shred meat, discard skin and bones.
- Skim excess fat from broth. Add noodles or rice if using and cook until tender.
- Return shredded chicken to the pot and stir.
- Taste and adjust seasoning. Stir in parsley and optional lemon.
- Serve warm and enjoy.
Notes
For the clearest broth, simmer gently—never boil vigorously.
