- Preheat oven to 350°F (175°C). Grease an 8x8-inch baking pan or line with parchment paper.
- Whisk together melted butter and sugar in a large bowl until smooth. Add eggs and vanilla extract and mix well.
- Gradually fold in flour, baking powder, and salt until combined.
- Stir in fresh lemon juice and lemon zest.
- Pour batter into prepared pan and bake for 25–30 minutes or until a toothpick comes out mostly clean.
- Cool completely before slicing. Dust with powdered sugar if desired.
Notes
Store in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
