Ingredients
  

  • 1 lb ground beef 80/20
  • 0.75 cup breadcrumbs
  • 0.5 cup milk
  • 1 egg
  • 0.5 cup Parmesan cheese grated
  • 2 cloves garlic minced
  • 0.25 cup onion finely minced or grated
  • 2 tbsp fresh parsley chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil for brushing

Method
 

  1. Preheat oven to 400°F (205°C) and line a baking sheet with parchment paper.
  2. Mix breadcrumbs and milk in a large bowl; let soak 1–2 minutes.
  3. Add egg, Parmesan, garlic, onion, parsley, salt, and pepper; mix gently.
  4. Add ground beef and mix just until combined.
  5. Roll into 1½-inch meatballs and place on baking sheet.
  6. Brush lightly with olive oil and bake 18–22 minutes until cooked through.

Notes

For extra browning, broil for 1–2 minutes at the end if desired.
