Ingredients
  

Cookie Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp vanilla extract
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 1 egg large
  • 0.5 cup milk
Filling
  • 0.5 cup unsalted butter softened
  • 1.5 cups powdered sugar
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 2-3 tbsp cream
Chocolate Glaze
  • 1 cup semisweet chocolate chips
  • 2 tbsp butter
  • 2 tbsp milk

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar until fluffy. Add egg and vanilla.
  4. Add dry ingredients alternately with milk until smooth.
  5. Scoop dough onto baking sheets and bake 10–12 minutes.
  6. Beat butter, powdered sugar, cornstarch, and vanilla to make filling. Add cream until fluffy.
  7. Sandwich cookies with filling.
  8. Melt chocolate, butter, and milk for glaze. Spoon over cookies and let set.

Notes

Chill the cookies after assembly for easier handling.
