Ingredients
  

Cookie Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.5 cup milk
Filling
  • 1 cup whole milk
  • 2 egg yolks
  • 0.25 cup sugar
  • 2 tbsp cornstarch
  • 2 tbsp butter
Ganache
  • 1 cup chocolate chips semi-sweet
  • 0.5 cup heavy cream

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F and line baking sheets.
  2. Mix dry ingredients in a bowl.
  3. Cream butter and sugar, then add egg and vanilla.
  4. Alternate adding dry ingredients and milk.
  5. Bake cookies until lightly golden.
  6. Prepare pastry cream and chill.
  7. Make chocolate ganache.
  8. Assemble cookies with filling and ganache.

Notes

Chill before serving for best texture.
