Breakfast Lasagna Layers
  • 1 lb breakfast sausage pork or turkey
  • 1 medium onion finely diced
  • 6 large eggs
  • 1 cup milk whole or 2%
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 4 cups frozen shredded hash browns thawed and patted dry
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 0.5 cup Parmesan cheese
  • 6 flour tortillas cut to fit pan
  • 2 tbsp butter for greasing
  • fresh parsley for garnish

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter.
  2. Cook breakfast sausage and onion in a skillet until browned; drain excess grease.
  3. Whisk eggs, milk, garlic powder, paprika, salt, and pepper in a bowl.
  4. Layer hash browns, sausage mixture, cheeses, and tortillas in the dish.
  5. Pour half the egg mixture over layers; repeat with remaining ingredients.
  6. Top with extra cheese and cover with foil.
  7. Bake for 35 minutes covered, then uncover and bake another 15–20 minutes until golden.
  8. Let rest 10 minutes, garnish with parsley, and serve warm.

Notes

Can be assembled a day ahead and refrigerated overnight before baking.
