Method
- Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter.
- Cook breakfast sausage and onion in a skillet until browned; drain excess grease.
- Whisk eggs, milk, garlic powder, paprika, salt, and pepper in a bowl.
- Layer hash browns, sausage mixture, cheeses, and tortillas in the dish.
- Pour half the egg mixture over layers; repeat with remaining ingredients.
- Top with extra cheese and cover with foil.
- Bake for 35 minutes covered, then uncover and bake another 15–20 minutes until golden.
- Let rest 10 minutes, garnish with parsley, and serve warm.
Notes
Can be assembled a day ahead and refrigerated overnight before baking.
