Ingredients
  

Cookie Dough
  • 1 cup unsalted butter browned and cooled
  • 1 cup powdered sugar
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1 cup pecans toasted and chopped
Finishing
  • powdered sugar for dusting

Method
 

  1. Brown the butter in a saucepan until golden and nutty, then cool completely.
  2. Toast chopped pecans in a dry skillet for 2–3 minutes.
  3. Whisk cooled browned butter and powdered sugar together until smooth. Add vanilla.
  4. Stir in flour, baking powder, and salt until a dough forms. Fold in pecans.
  5. Chill dough for 20–30 minutes.
  6. Preheat oven to 350°F (175°C). Scoop dough onto a parchment-lined baking sheet and gently flatten.
  7. Bake for 10–12 minutes until edges are lightly golden.
  8. Dust warm cookies with powdered sugar and cool before storing.

Notes

For extra flavor, add a pinch of cinnamon or nutmeg to the dough.
