Method
- Season chicken with Cajun seasoning, paprika, salt, and pepper.
- Sear chicken in olive oil over medium-high heat until browned; remove.
- Sauté onion and bell pepper until softened; add garlic.
- Stir in rice and chicken broth; bring to a simmer.
- Return chicken to pot, cover, and cook 18–20 minutes.
- Rest 5 minutes, fluff rice, garnish, and serve.
