Ingredients
  

  • 1.5 lb chicken breast cubed
  • 1.5 cups long-grain white rice
  • 1 onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 2 tsp Cajun seasoning adjust to taste
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 3 cups chicken broth
  • 1 tbsp fresh parsley chopped

Equipment

  • Large skillet or Dutch oven
  • Wooden spoon
  • Knife
  • Cutting board

Method
 

  1. Season chicken with Cajun seasoning, paprika, salt, and pepper.
  2. Sear chicken in olive oil over medium-high heat until browned; remove.
  3. Sauté onion and bell pepper until softened; add garlic.
  4. Stir in rice and chicken broth; bring to a simmer.
  5. Return chicken to pot, cover, and cook 18–20 minutes.
  6. Rest 5 minutes, fluff rice, garnish, and serve.

Notes

Adjust Cajun seasoning for desired spice level.
