Ingredients
  

  • 1 sheet puff pastry thawed
  • 3 yellow onions thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp fresh thyme
  • 4 oz goat cheese softened
  • 1 tsp balsamic vinegar optional
  • 1 egg beaten

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Cook onions in olive oil and butter over medium-low heat 25–30 minutes until caramelized.
  3. Roll out puff pastry and cut into 6 pieces. Score borders.
  4. Spread goat cheese and top with caramelized onions.
  5. Brush edges with egg wash and bake 18–22 minutes until golden.
  6. Garnish with thyme and serve.

Notes

Caramelize onions slowly for best sweetness and depth of flavor.
