- Shred carrots using a box grater and place in a mixing bowl.
- Slice apples into thin matchsticks and toss with a little lemon juice.
- Whisk lemon juice, honey, olive oil, salt, and pepper in a small bowl.
- Add apples to carrots and mix gently.
- Stir in raisins and seeds or nuts if using.
- Pour dressing over salad and toss until evenly coated.
- Let salad rest 5–10 minutes before serving.
Notes
For a creamier version, mix a tablespoon of Greek yogurt into the dressing.
