Ingredients
  

Salad
  • 3 carrots peeled and shredded
  • 2 apples thinly sliced or julienned
  • 0.25 cup raisins optional
  • 2 tbsp sunflower seeds or walnuts optional
Dressing
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 0.25 tsp salt
  • 0.25 tsp black pepper

  • Cutting board

Method
 

  1. Shred carrots using a box grater and place in a mixing bowl.
  2. Slice apples into thin matchsticks and toss with a little lemon juice.
  3. Whisk lemon juice, honey, olive oil, salt, and pepper in a small bowl.
  4. Add apples to carrots and mix gently.
  5. Stir in raisins and seeds or nuts if using.
  6. Pour dressing over salad and toss until evenly coated.
  7. Let salad rest 5–10 minutes before serving.

Notes

For a creamier version, mix a tablespoon of Greek yogurt into the dressing.
