Ingredients
  

Salad
  • 6 cups romaine or mixed lettuce chopped
  • 1 cup shredded carrots
  • 1 cup shredded red cabbage
  • 1 cup cherry tomatoes halved
  • 0.5 cup roasted cashews
  • 2 green onions thinly sliced
  • 0.5 cup mayonnaise
  • 0.25 cup Greek yogurt
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Whisk mayonnaise, Greek yogurt, lemon juice, honey, salt, and pepper until smooth.
  2. Toss lettuce, carrots, red cabbage, cherry tomatoes, and green onions with dressing.
  3. Sprinkle roasted cashews on top and toss lightly.
  4. Chill 10–15 minutes before serving or serve immediately for maximum crunch.

Notes

For extra crunch, add cashews just before serving.
