Ingredients
  

Seafood Filling
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 celery stalks diced
  • 1 cup diced carrots
  • 3 cloves garlic minced
  • 2 tbsp flour
  • 1.5 cups seafood stock
  • 1 cup heavy cream
  • 1 tsp Old Bay seasoning
  • 0.5 tsp dried thyme
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 lb shrimp peeled and deveined
  • 0.5 lb bay scallops
  • 1 cup lump crab meat
  • 1 cup frozen peas
  • 1 tbsp lemon juice
Cheddar Bay Biscuits
  • 1 box Cheddar Bay Biscuit mix
  • 0.5 cup shredded cheddar cheese
  • 0.33 cup water or milk
  • 1 tsp garlic powder
  • 1 tsp dried parsley
Lemon Butter Glaze
  • 4 tbsp melted butter
  • 1 tsp garlic powder
  • 1 tbsp parsley minced

Equipment

  • 9x13 baking dish

Method
 

  1. Sauté onion, celery, and carrots in butter and olive oil until softened. Add garlic.
  2. Stir in flour to coat vegetables. Add seafood stock gradually and stir until thickened.
  3. Pour in heavy cream. Add Old Bay, thyme, salt, and pepper.
  4. Add shrimp, scallops, crab, peas, and lemon juice. Remove from heat.
  5. Pour filling into a greased 9x13 baking dish.
  6. Mix biscuit dough with cheddar, garlic powder, and parsley. Add water or milk until dough forms.
  7. Scoop biscuit mounds over the filling.
  8. Bake at 400°F for 22–26 minutes until biscuits are golden.
  9. Brush biscuits with melted butter mixed with garlic powder and parsley.

Notes

For a richer sauce, add 2 tbsp cream cheese. For a thicker filling, increase flour to 3 tbsp.
