Ingredients
  

  • 1 lb ground beef
  • 1 lb baby potatoes halved
  • 1 onion diced
  • 2 carrots diced
  • 2 stalks celery diced
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 4 cups chicken broth
  • 2 cups milk
  • 2 cups cheddar cheese shredded
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika

Method
 

  1. Brown ground beef in a large pot; drain and set aside.
  2. Melt butter in the pot and cook onion, carrots, and celery until softened.
  3. Stir in garlic and flour; cook 1–2 minutes.
  4. Gradually add chicken broth, stirring constantly.
  5. Add baby potatoes, salt, pepper, and paprika; simmer until tender.
  6. Stir in milk and cooked beef; simmer 5 minutes.
  7. Add cheddar cheese and stir until melted.
  8. Serve hot.

Notes

Add cheese over low heat to keep the soup smooth and creamy.
