  • 2 large eggs
  • 2 slices bread sourdough or whole wheat
  • 0.5 cup shredded cheddar cheese
  • 1 tbsp butter for toasting
  • to taste salt
  • to taste black pepper
  • optional chives or parsley for garnish

  • Non-stick skillet
  • Spatula

Method
 

  1. Lightly butter each slice of bread.
  2. Toast bread slices buttered side down until golden brown.
  3. In a separate pan, cook eggs to desired doneness, seasoning with salt and pepper.
  4. Sprinkle shredded cheese over eggs and allow to melt.
  5. Place cheesy eggs on toasted bread slices.
  6. Garnish with chives, parsley, or paprika.
  7. Serve immediately.

Notes

For extra flavor, try adding a slice of avocado or a sprinkle of hot sauce.
