Cheesy One-Pot Beef and Potatoes

Ingredients
  

  • 1 lb ground beef lean preferred
  • 1 tbsp olive oil
  • 1 onion finely diced
  • 3 cloves garlic minced
  • 4 medium potatoes thinly sliced
  • 1.5 cups cheddar cheese shredded, divided
  • 1 cup milk
  • 0.5 cup beef broth
  • 2 tbsp butter
  • 1 tsp paprika
  • 1 tsp dried thyme or Italian seasoning
  • salt and black pepper to taste
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Heat olive oil in a large skillet over medium-high heat and brown the ground beef.
  2. Add onion and garlic; cook until fragrant and softened.
  3. Add sliced potatoes and stir to coat in the beef mixture.
  4. Pour in milk and beef broth, then stir in butter, paprika, and thyme.
  5. Cover and simmer 15–18 minutes, stirring occasionally, until potatoes are tender.
  6. Sprinkle 1 cup of cheese over the top, cover until melted.
  7. Remove from heat, top with remaining cheese and parsley before serving.

Notes

For a crispy top, broil the skillet for 2–3 minutes before serving.
