Method
- Heat olive oil in a large skillet over medium-high heat and brown the ground beef.
- Add onion and garlic; cook until fragrant and softened.
- Add sliced potatoes and stir to coat in the beef mixture.
- Pour in milk and beef broth, then stir in butter, paprika, and thyme.
- Cover and simmer 15–18 minutes, stirring occasionally, until potatoes are tender.
- Sprinkle 1 cup of cheese over the top, cover until melted.
- Remove from heat, top with remaining cheese and parsley before serving.
Notes
For a crispy top, broil the skillet for 2–3 minutes before serving.
