Method
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Boil or steam diced potatoes until tender (8–10 minutes). Drain and lightly mash with butter.
- Stir in cheddar cheese, green onions, garlic powder, smoked paprika, salt, and pepper.
- Warm tortillas for 15–20 seconds to make them pliable.
- Place potato mixture in tortillas, fold sides, and roll tightly.
- Arrange burritos seam-side down in baking dish. Top with tater tots and remaining cheddar cheese.
- Bake for 20–25 minutes until heated through and tater tots are golden and crispy.
- Cool 5 minutes before serving. Add optional toppings if desired.
Notes
For best results, slightly under-mash potatoes for a chunkier texture.
