Ingredients
  

Burrito Filling
  • 3 cups diced potatoes about 2 medium potatoes
  • 2 tbsp butter
  • 1 cup shredded cheddar cheese
  • 2 green onions sliced
  • 0.5 tsp garlic powder
  • 0.5 tsp smoked paprika
  • to taste salt and pepper
Assembly
  • 4 large flour tortillas
  • 1 cup cooked tater tots slightly crispy
  • 0.5 cup shredded cheddar cheese for topping
  • Optional sour cream, salsa, avocado for serving

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Boil or steam diced potatoes until tender (8–10 minutes). Drain and lightly mash with butter.
  3. Stir in cheddar cheese, green onions, garlic powder, smoked paprika, salt, and pepper.
  4. Warm tortillas for 15–20 seconds to make them pliable.
  5. Place potato mixture in tortillas, fold sides, and roll tightly.
  6. Arrange burritos seam-side down in baking dish. Top with tater tots and remaining cheddar cheese.
  7. Bake for 20–25 minutes until heated through and tater tots are golden and crispy.
  8. Cool 5 minutes before serving. Add optional toppings if desired.

Notes

For best results, slightly under-mash potatoes for a chunkier texture.
