Ingredients
  

Chicken Meatballs
  • 1 lb ground chicken
  • 0.5 cup breadcrumbs
  • 0.25 cup parmesan cheese grated
  • 1 egg
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp parsley chopped
Florentine Sauce
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1 onion finely chopped
  • 2 cups fresh spinach chopped
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup parmesan cheese grated

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Combine ground chicken, breadcrumbs, parmesan, egg, garlic, Italian seasoning, salt, pepper, and parsley.
  2. Form mixture into meatballs.
  3. Brown meatballs in olive oil until golden.
  4. Remove meatballs and sauté onion and garlic in butter.
  5. Add spinach and cook until wilted.
  6. Stir in cream, broth, parmesan, and seasoning.
  7. Return meatballs to skillet and simmer until cooked through.

Notes

Serve over pasta, rice, or mashed potatoes for a comforting meal.
