Ingredients
  

Zucchini Boats
  • 4 medium zucchini halved lengthwise
  • 1 tbsp olive oil
  • 0.25 tsp salt
Chicken Filling
  • 2 cups cooked shredded chicken
  • 1 cup marinara sauce
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • 0.25 tsp red pepper flakes optional
Topping
  • 1 cup shredded mozzarella cheese
  • 0.25 cup grated parmesan cheese
  • 0.25 cup Italian breadcrumbs

Method
 

  1. Preheat oven to 400°F (200°C) and prepare baking dish.
  2. Brush zucchini with oil, season, and bake 10 minutes.
  3. Mix chicken, marinara, garlic, and seasonings.
  4. Fill zucchini boats and top with cheese and breadcrumbs.
  5. Bake 15–20 minutes until bubbly and golden.

Notes

Broil briefly for extra browning if desired.
