Ingredients
  

  • 4 zucchini medium
  • 2 cups cooked chicken breast shredded
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese shredded
  • 0.25 cup parmesan cheese grated
  • 0.5 cup breadcrumbs optional
  • 2 cloves garlic minced
  • 1 tbsp olive oil

Method
 

  1. Preheat oven to 400°F and line a baking sheet.
  2. Slice zucchini lengthwise and scoop centers to form boats.
  3. Sauté garlic in olive oil, add chicken and seasoning.
  4. Stir in marinara sauce and remove from heat.
  5. Fill zucchini boats with chicken mixture.
  6. Top with breadcrumbs, mozzarella, and parmesan.
  7. Bake 20–25 minutes until tender and bubbly.

Notes

For extra browning, broil for 2 minutes before serving.
