- Preheat oven to 400°F and line a baking sheet.
- Slice zucchini lengthwise and scoop centers to form boats.
- Sauté garlic in olive oil, add chicken and seasoning.
- Stir in marinara sauce and remove from heat.
- Fill zucchini boats with chicken mixture.
- Top with breadcrumbs, mozzarella, and parmesan.
- Bake 20–25 minutes until tender and bubbly.
Notes
For extra browning, broil for 2 minutes before serving.
