Casserole Base
  • 2 cups cooked wild rice
  • 3 cups shredded chicken
  • 1 onion diced
  • 2 cups mushrooms sliced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 2 tbsp olive oil
Creamy Homemade Sauce
  • 4 tbsp butter
  • 0.25 cup flour
  • 2 cups chicken broth
  • 1 cup milk or heavy cream
  • 0.5 cup sour cream
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp thyme
  • 0.5 tsp poultry seasoning optional
Topping
  • 1 cup Swiss or mozzarella cheese
  • 0.25 cup parmesan cheese
  • fresh parsley for garnish

Method
 

  1. Cook wild rice according to package directions.
  2. Preheat oven to 375°F and grease a casserole dish.
  3. Sauté onion, celery, mushrooms, and garlic in olive oil.
  4. Make sauce by creating a roux with butter and flour, then adding broth, milk, and seasonings.
  5. Combine rice, chicken, vegetables, and sauce in a large bowl.
  6. Spread mixture in casserole dish and top with cheese.
  7. Bake 25–30 minutes until hot and bubbly.

Notes

Use real wild rice for best texture and flavor. Add broccoli or carrots for color and extra nutrition.
