Chinese BBQ Pork (Char Siu)

Ingredients
  

Pork & Marinade
  • 2 lbs pork loin or pork shoulder
  • 0.25 cup soy sauce
  • 0.25 cup hoisin sauce
  • 3 tbsp honey
  • 2 tbsp brown sugar
  • 1 tbsp oyster sauce
  • 1 tbsp rice vinegar or Shaoxing wine
  • 1 tbsp minced garlic
  • 1 tsp grated ginger
  • 1 tsp Chinese five-spice powder
  • 0.5 tsp sesame oil
  • 2 drops red food coloring optional
Glaze
  • 2 tbsp honey
  • 2 tbsp reserved marinade

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Brush for glazing

Method
 

  1. Slice pork into long strips 2–3 inches wide.
  2. Whisk together marinade ingredients in a bowl.
  3. Marinate pork for at least 4 hours or overnight.
  4. Preheat oven to 400°F (200°C) and line a baking sheet with foil.
  5. Place pork on a wire rack set over the sheet.
  6. Bake for 20 minutes, reserving marinade.
  7. Mix honey with reserved marinade to make glaze.
  8. Flip pork, brush with glaze, and bake 15–20 more minutes.
  9. Broil 2–3 minutes until caramelized.
  10. Rest 10 minutes, then slice and serve.

Notes

For juicier results, use pork shoulder instead of loin. Baste often for a thicker glaze.
