Ingredients
  

Toffee Base
  • 40 saltine crackers about 1 sleeve
  • 1 cup unsalted butter 2 sticks
  • 1 cup brown sugar light or dark
  • 1 tsp vanilla extract
Churro Topping
  • 1.5 tsp ground cinnamon
  • 0.25 cup granulated sugar
  • 1 cup white chocolate chips optional

Equipment

  • Baking sheet
  • Saucepan
  • Foil or parchment paper
  • Spatula

Method
 

  1. Preheat oven to 400°F (200°C) and line a rimmed baking sheet with foil.
  2. Arrange saltine crackers in a single layer to cover the pan.
  3. In a saucepan, melt butter and brown sugar. Boil 3–4 minutes while stirring until thickened. Add vanilla.
  4. Pour toffee over crackers and spread evenly. Bake 5 minutes until bubbly.
  5. Remove from oven, sprinkle white chocolate chips, and spread smooth after 2 minutes.
  6. Mix sugar and cinnamon and sprinkle over top.
  7. Cool completely, then break into bite-sized pieces.

Notes

For an extra kick, sprinkle with flaky salt or crushed nuts before cooling.
