Method
- Heat 2–3 inches of oil in a heavy pot to 350°F (175°C).
- In a bowl, whisk flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, whisk milk, melted butter, egg, and vanilla.
- Combine wet and dry ingredients, stirring gently until just mixed.
- Drop small scoops of batter into the oil and fry until golden, about 2–3 minutes.
- Transfer to paper towels to drain briefly.
- Roll warm donut holes in cinnamon sugar until fully coated.
- Serve warm.
Notes
Do not overmix the batter for fluffier donut holes. Maintain oil at 350°F for even frying.
